This discussion forum is a slight departure from strictly science behind the food, though incorporates the science we have been/are learning. Food and diet is impacted/influenced broadly. How IS diet (what we eat) impacted based on food availability (food security versus food insecurity), fad diets, and on health disparities in the U.S. Food security has long been considered among the important social factors that can help determine health outcomes. According to a U.S. Department of Agriculture report released in October, nearly 13% of U.S. households – or 17 million households – were food insecure in 2022 (Source, 2024). Let’s keep this discussion focused on food insecurity, food availability (those foods we choose and/or have been available (food systems), diets, and our overall relationship to food. Though globally the world strives toward the common goal of good nutritious food available to all, and the world is interconnected, the topic is too large to tackle here from a global standpoint. I don’t mean for this forum to become overly political (though politics & policy is part of the challenge to food availability, diets, and food industry itself). Keep the focus on what we have, how things are, and/or will face in the United States.

The rise in obesity and other forms of malnutrition could partly be a result of moderate FI [food insecurity]. Highly energy-dense processed foods that are high in saturated fats, sugars, and sodium are consumed more often than micronutrient-dense quality foods. Energy-dense foods may help meet daily caloric requirements, but essential nutrients are missing. Therefore, in many countries, undernutrition and obesity coexist and both can be consequences of FI.
