You are working as a health educator for the Health Department in New Haven, CT. Among your many responsibilities, you serve on the nutrition committee for the New Haven school district. At your latest meeting, a member of the committee mentioned that he had read an article in the paper about a new study that showed “regular consumption of egg yolks increases your risk of heart disease just as much as smoking cigarettes” and this conclusion was in direct conflict with a previous study (published in 1999) that had shown it was safe to eat up to 1 egg per day. The current breakfast menu for the New Haven school district (K-12) offers scrambled eggs (inclusive of yolks) as a daily option in the cafeteria at each school. You are the only person on the committee who has experience with reading academic journal articles, so you have been asked to read these two studies and report back to the committee at your next meeting.
