ESSAY PROJECT – Required Components
· Introduction & Justification – Describe the topic of your Essay including a brief summary of
the current state of the health trends in the US and the connection to the dietary habits
including the changes from the traditional WOE (Way of Eating) in the 1960’s at the time the US Dietary Guidelines were established to today’s preponderance of Ultra Processed Foods
in the US diet. Cite references of obesity and metabolic disease rates gathered from the
Course content or RECENT literature/CDC/WHO statistics.
· Discussion – Discuss the relationships between dietary patterns, metabolic response to
specific dietary components (macro ratios, UPF, Industrial sugars & oils, etc.) and the
development of metabolic diseases. Include the historical growth of these metabolic
diseases and align that to the changes from our ancestral WOE to the ultra-processed food modern diet of western countries today.
· Summary – Wrap up your paper with a summary paragraph(s) that includes the problem,
the current state, the novel approaches/paradigm, and a Conclusion as to an advisable
course forward, based on your knowledge and the course content. Cite your references AMA format.
Some Questions to consider include:
– How is traditional medicine treating the growth of metabolic disease currently?
– What is the ‘New Paradigm’ of addressing these diseases with dietary intervention/
prevention?
– What is the success or long-term outcomes of the two approaches?
– What is the economic/personal cost of one vs the other approach?

opinions (I think, I have seen, I believe). Scientific writing ONLY states facts and the findings of research. This is NOT a ‘speech to persuade’ but is a presentation of facts and the current
